BROCCOLI CHOWDER

1 medium onion, chopped
2 tablespoons butter
2 tablespoons cornstarch
4 teaspoons chicken bouillon, instant
1 pound processed American cheese, cubed
4 cups milk
1/4 teaspoon pepper
1/8 teaspoon garlic salt
10 ounces
broccoli, frozen, cooked

Saute onion in butter in saucepan until tender. Sprinkle with flour. Stir in bouillon dissolved in 2 cups hot water. Cook until smooth and thick stirring constantly. Add cheese stirring until melted. Stir in milk gradually. Add seasonings and broccoli with cooking liquid mixing well. Note: Prepare everything ahead of cooking time. Serving Size: 6



GRANDMA'S CHICKEN AND BROCCOLI BAKE
6 large boneless chicken breast
1 large can cream of chicken soup
1 cup mayonnaise
1 16 oz. bag frozen
broccoli
1 cup milk
1 tablespoon garlic salt
2 tablespoon curry powder
2 bags minute white rice
1 pinch black pepper

First, cut chicken breast into bite sized chuncks. Then, mix cream of chicken soup, mayonnaise, milk, garlic salt, curry powder, and pepper in a large bowl. Next, combine chicken, broccoli, and the chicken soup mix. Pour into a casserole dish. Bake in a preheated 350F degree oven for 1 hour and 10 minutes. During the last 10 minutes of baking time, boil the rice. When the casserole has finished cooking, mix in the rice. Bon-Appetite! Submitted by: Terron





BROCCOLI CHEESE SOUP

1 qt. water
2 c. diced
potatoes
2 chicken bouillon cubes
1 c. diced onion
20 oz. frozen
broccoli, chopped or 1 bunch fresh broccoli
2 cans cream of chicken soup
1 lb. Velveeta or American cheese
Mix water, potatoes, bouillon, onion and broccoli together.
Cook until done, about 20-30 minutes. Add soup and cheese. Simmer 15 minutes. Submitted by: robert_americanul@yahoo.com.au


CREAM OF BROCCOLI SOUP

1 bag cut fro
zen broccoli (small bag)
1-8oz. pkg. cream cheese
1/2 block Velveeta cheese
2 cans evaporated milk

In saucepan over low-medium heat, place milk and cheeses until cheese is melted. Once all is melted and smooth you may add more milk if you like it thicker. I usually wait until I add the broccoli, sometimes the water from the broccoli is enough.

BROCCOLI CASSEROLE

1 package frozen
broccoli
1 onion
3 slices of Velveeta cheese
2 tablespoons butter
1 cup of herb spiced croutons

Preheat the oven to 325°F. Finely dice the onion. Combine all the ingredients (except for the butter). Melt butter in a saucepan, pour over the other ingredients and stir. Cook for 45 minutes to 1 hour. Submitted by: Kimberly Poole
